Peanut Sauce:

2 cups peanuts

3 tablespoon olive oil

2 tablespoon chile de arbol

1 tablespoon red pepper flakes

***puree for 5 minutes***

Brussels Sprouts:

2 pounds sprouts, cut in half

Salt, Pepper, Olive Oil --- roast for 20 minutes (NEED BROWN)

 

Taco Preparation:

Place 3 brussels in the taco, add Peanut Sauce (above) on top

Top with thin sliced brussels (raw) and peanuts with Lemon Vinaigrette (salad)

Avocado slice, scallions, and 3 jalapeño chile – for garnish
